Rocket & Beetroot Salad with Raspberry Balsamic Vinaigrette Dressing

Live Oil – single serve 15 ml

Raspberry Balsamic Vinaigrette Dressing


Ingredients for 2/3 person:

  • 100 g Rocket leafs
  • 100 g Beetroots washed & trimmed,
  • 2 Ripe Roman Tomatoes,
  • 50 g Oven Dried Ricotta cheese,
  • 5 g Chopped Walnuts
  • Sea Salt & Freshly Ground Black Pepper
  • 1 bottles of “Live Oil” Raspberry Vinaigrette Dressing (15ml)

Preparation

Wash rocket leaves under running water. Wrap the beetroots in foil packets and roast in the oven until tender, about 60 mins.
Open the foil packets and let cool. Once cool enough to handle, peel using towel, then dice into cubes and arrange on top of the rocket leafs.
Clean & Slice tomatoes. Place all the ingredients, gently toss until well combined, top with the dried goat cheese and walnuts.

To finish the salad: Season with sea salt.

Serve into serving ceramic plates, garnish using “Live Oil” Raspberry Vinaigrette Dressing.
