“Saffron Summer Week” 2019

This event is involving 9 Chef from Lazio and Campania (Italy), offering exclusive recipes especially created with our saffron. Our Nepi Saffron is an high quality product, and with this event it will be possible to find out more avout Italian countryside.

The “Consorzio Zafferano di Nepi” (Nepi Saffron Consorsium), is pledged in valorising the cultivation and production of this precious flower, organising the culinary event “Summer Saffron Week”, a dedicated week for discovering Nepi Saffron.

This edition is taking place between 14th and 21st of July 2019, and it will be possible to taste this fine spice with innovative recipes, where saffron is used in a creative way as an important element.


Some of the exclusive recipes possible to taste only during this period are: Cannolo ripieno di baccalà mantecato allo zafferano” (Cannolo filled with saffron creamed codfish) , “Arancino con Zafferano, Gamberi, Cipolla di Tropea e Bacon” (Arancino with saffron, shrimps, Tropea Onion and Bacon), “Trofie allo zafferano con gamberi, calamari e spinaci” (Trofie with saffron and shrimps, squids and spinach), “Gnocchetti con sgombro, zucchine zafferano e arancia” (Gnocchetto with mackerel, zucchini, saffron and orange), “Spigola allo zafferano con Gamberi” (seabass with saffron and shrimps),  “Petto d’anatra con vellutata di patate allo zafferano”  (duck fillet with potatoes and saffron velvety) and “Crema pasticcera allo zafferano, pesche e cialda croccante con polline e pistacchi” (saffron custard, peach and crunchy waffle with pistacchio pollen)  …. these are just a few of the delicious recipes especially created for valorising this fine ingredient, available on during the Summer Saffron Week!

One of these recipes has been created by the Chef Fabio Pesticcio of the Restaurant with 1 Michelin star “Il Papavero”.


The event organised by the “Consorzio Zafferano di Nepi” is sponsored by GROUP SOI among Lazio and Campania regions. This challenging project has a specific mission: promoting, preserving and valorising the Nepi Saffron quality, through an environmentally friendly cultivation and promotion, being also aware of the local reality.
